Paleo Guac Chicken Dinner

How to make everything in this meal:

Sweet Potato Fries:
-preheat oven to 425
-Chop sweet potato into spears no thicker than 3/4 in.
-Soak spears in water for 45 mins to 1 hour (start preparing your chicken now)
-Drain spears and place spears  in a large bowl or bag, coat with 1/4 C coconut oil, salt and pepper to taste. Experiment here: try chili powder, paprika, or even cinnamon!
-Place on cooking sheet and into oven
-bake for 20 minutes then flip them, bake for another 15-20 minutes

Tip: during any downtime prepare your salad or guac.

Chicken:
Preheat oven to 350 when appropriate
-Marinate thawed tenders for 1 hour in:
1/3 C Coconut oil, 2 cloves fresh garlic, 1/2 Tablespoon paprika, tsp Ginger powder, 1/2 tsp salt, teaspoon honey
-bake tenders in oven at 350 for 20-25 minutes.
-serve with fresh guacamole over top.

Fast easy guac:
-1 large avocado, or 2 small
-1/2 C organic salsa
-salt to taste
I recommend using a blender to get a smoother consistency for dipping.

Salad:
-Large handful of mixed greens
-1/4 zucchini, chopped
-1/4 yellow squash, sliced
-1/2 carrot, shredded
-1/2 Roma tomato, sliced
-a few green olives
Mix all ingredients together, drizzle oil and vinegar dressing over top

Dressing:
-1 T balsamic vinegar
-3 T Extra Virgin Olive Oil
